Tofu with Chinese Mushrooms and Dates Recipe

Ingredients:

  • 8 cakes of large tofu

  • 6 Chinese mushrooms

  • 10 dried Chinese red dates

  • 1 clove garlic, minced

  • 1 small piece of ginger, minced

  • 1/4 cup and 1/2 cup vegetable oil

  • 2 tablespoons rice wine

  • 2 tablespoons sesame oil

  • 3 tablespoons oyster sauce

  • 2 tablespoons soy sauce

  • 2 tablespoons cornstarch

Method:

  1. Soak the mushrooms for 2 hours, drain and cut them into thin slices

  2. Soak the dates for 2 hours, drain, and cut them into half and remove the pits

  3. Cut the tofu into small pieces (cut into half and then slice each half to thinner slices).

  4. Heat up wok and 1/2 cup oil, and fry the tofu (2-3 slices at a time) until golden brown, set aside on a plate

  5. Heat the 1/2 cup oil, stir fry garlic and ginger for 1 minute.

  6. Add mushrooms and dates, 4 tablespoons of water and cornstarch and heat through

  7. Add rice wine, soy sauce and oyster sauce and heat through for 5 minutes

  8. Pour the sauce on top of the tofu

  9. Ready to serve
