Stuffed Bean Curd Recipe

Ingredients:

  • 1 package bean curd (4 pieces to a package)

  • 1 tablespoon dried shrimps

  • 1 oz fish meat

  • 2 oz ground pork

  • 1 teaspoon cornstarch dissolved in 2 tablespoons water

Ingredients A:

  • Dash of salt

  • Dash of cooking wine or sherry

  • 1 tablespoon water

  • 1/2 tablespoon cornstarch

Ingredients B:

  • 2 1/2 tablespoons soy sauce

  • 1/2 teaspoon sugar

  • Dash of black pepper

  • 1 cup stock or water

Method:

  1. Soak the dried shrimps in water for 5-10 minutes; drain and chop finely with the fish meat. Add ground pork and Ingredients A; mix thoroughly. This will be the filling

  2. Diagonally cut each piece of bean curd to obtain 4 triangular pieces (to total 16 pieces). Stand the triangular pieces of bean curd so that 4 points are flat on working surface.

  3. Hollow out the center of bean curd for the filling. Do not remove too much bean curd because the sides will weaken. Sprinkle the cavity with cornstarch and stuff the cavity with some filling. Repeat fro remaining 15 pieces of bean curd

  4. Heat the wok then add 3 tablespoons oil. Place the stuffed bean curd in the wok, filling side down. Fry over medium heat until golden brown. Add Ingredients B; cover. Simmer until cooked.

  5. Add cornstarch mixture to thicken; stir. Sprinkle with sesame oil then transfer to a serving platter; serve.
