Eight Treasure Stir Fried Vegetables Recipe

Ingredients:

  • 1/4 cup raw, shelled peanuts

  • 1/4 cup raw, shelled green soy beans

  • 1/4 cup diced, canned bamboo shoots

  • 1/4 cup diced carrot

  • 1/4 cup diced cucumber

  • 1/2 cup diced pork tenderloin

  • 1/2 cup diced pressed bean curd

Ingredients A:

  • 1 teaspoon cornstarch

  • 1/2 tablespoon cooking wine or sherry

Ingredients B:

  • 1 teaspoon hot bean paste

  • 1 tablespoon sweet bean paste

  • 1 tablespoon soy sauce

  • 1/2 tablespoon sugar

Method:

  1. Cook peanuts, soy beans, and carrots separately in water. Mix pork with Ingredients A; set aside for later use. Mix Ingredients B in a bowl and set aside for later use.

  2. Heat the wok then add 3 tablespoons oil. Stir fry the meat until cooked; add peanuts and all other ingredients; stir to mix; add Ingredients B; stir for 2 minutes. Transfer to a serving plate and serve
