Deep Fried Tofu with Mushrooms

Ingredients:

cakes tofu

tablespoon salt

1/2 cup oil (deep fried)

Cornstarch for coating

clove garlic, minced

scallions, cut into 1 inch pieces

1/2 lb pork tenderloin, sliced into bite size slices

Chinese mushrooms, soaked for 20 minutes, stemmed and cut
into quarters

tablespoon dry sherry

tablespoons soy sauce

teaspoon sugar

cup water

Method:

Sprinkle salt onto tofu, leave for 1 minute. Then, drain the
water

Heat wok and 1/2 cup oil over high heat. Coat the tofu with
cornstarch and deep fry tofu until light brown. Set aside on
a plate

Remove the oil and leave 2 tablespoons in the wok. Add
garlic and stir fry until fragrant.

Add scallions, pork, mushrooms and stir fry for 2 minutes

Add tofu, sherry, soy sauce, sugar and water. Cover and cook
for 15 minutes

Ready to serve
