Deep Fried Tofu with Mushrooms Recipe

Ingredients:

  • 4 cakes tofu

  • 1 tablespoon salt

  • 1/2 cup oil (deep fried)

  • Cornstarch for coating

  • 1 clove garlic, minced

  • 4 scallions, cut into 1 inch pieces

  • 1/2 lb pork tenderloin, sliced into bite size slices

  • 5 Chinese mushrooms, soaked for 20 minutes, stemmed and cut into quarters

  • 1 tablespoon dry sherry

  • 3 tablespoons soy sauce

  • 1 teaspoon sugar

  • 1 cup water

Method:

  1. Sprinkle salt onto tofu, leave for 1 minute. Then, drain the water

  2. Heat wok and 1/2 cup oil over high heat. Coat the tofu with cornstarch and deep fry tofu until light brown. Set aside on a plate

  3. Remove the oil and leave 2 tablespoons in the wok. Add garlic and stir fry until fragrant.

  4. Add scallions, pork, mushrooms and stir fry for 2 minutes

  5. Add tofu, sherry, soy sauce, sugar and water. Cover and cook for 15 minutes

  6. Ready to serve
