Chinese Style Stuffed Bitter Melon Recipe

Ingredients:

  • 4 bitter melons or bitter gourds

  • 1/4 lb ground pork

  • 4 cloves garlic

Marinade:

  • 1 teaspoon salt

  • 2 teaspoons cornstarch

  • 1/3 teaspoon chicken powder

  • 1 tablespoon dark soy sauce

  • Dash of sesame oil

  • Dash of pepper

Seasoning Mix:

  • 1 teaspoon sugar

  • 1/2 teaspoon chicken stock or powder

  • 1/2 teaspoon dark soy sauce

  • 1/4 cup chicken stock

  • 2 tablespoons crushed fermented black beans

Thickening:

  • 1 teaspoon cornstarch

  • 1 tablespoon water

Method:

  1. Marinade ground pork with marinade ingredients for 15 minutes, set aside

  2. Wash and seed bitter melon, cut into ring shapes. Boil bitter melon for 3 minutes. Rinse in cold water and wipe dry. Wait for the melon to cool off. Spread cornstarch on the inside ring of melons. Then, stuff ground pork

  3. Heat wok and 2 tablespoons oil, stir fry bitter melons for 2 minutes. Flip the other side and fry for another 2 minutes

  4. Add in seasoning mixture and fry for another 5 minutes until pork is thoroughly cooked. Put in thickening sauce, stir for another 2 minutes

  5. Ready to serve
