Chinese Sauté Egg Plants Recipe

Ingredients:

  • 2 long Japanese egg plants

  • 3 cloves garlic, finely chopped

  • 1 tablespoon fresh grated ginger

  • 2 green onions, chopped

  • 2 tablespoons soy sauce

  • 1 tablespoon sesame oil

  • 4 tablespoons cooking oil

Method:

  1. Heat up wok and cooking oil over medium heat

  2. Chop egg plants to about 1 inch cubes

  3. Put in garlic and stir fry for about 3 minutes. Then add in egg plants, and cook until the egg plants are tender

  4. Then put in ginger, green onion, soy sauce and stir fry for another 5 minutes

  5. Remove from heat and drizzle some sesame oil

  6. Stir to combine

  7. Ready to serve
