Method:

Cut the egg plant into half (from top to bottom) and then
cut into 2 inch sections

Slice the pork, red chili and spring onion into thin slices

Heat wok and cooking oil over high heat. Stir fry egg plants
for about 3 minutes, remove and set aside

Heat 1 tablespoon cooking oil, stir fry garlic until
fragrant.

Add in pork, red chili, spring onion, egg plants, red chili
bean paste, soy sauce, sugar, and water; simmer over medium
heat for 5 minutes until pork is cooked and egg plants are
soft

Add in cornstarch mixture, stir well until sauce is
thickened

Sprinkle with sesame oil
-
Ready to serve
