Chinese Home Style Egg Plants Recipe

Ingredients:

  • 2 egg plants

  • 2 oz lean pork

  • 1 red chili

  • 1 spring onion

  • 3 cloves garlic, minced

  • 1 tablespoon red chili bean paste

  • 1/4 teaspoon salt

  • 1 teaspoon soy sauce

  • 1 teaspoon sugar

  • 0.5 cup water

  • 1 teaspoon cornstarch dissolved in 1 tablespoon water

  • 1/2 teaspoon sesame oil

  • 4 cups cooking oil

Method:

  1. Cut the egg plant into half (from top to bottom) and then cut into 2 inch sections

  2. Slice the pork, red chili and spring onion into thin slices

  3. Heat wok and cooking oil over high heat. Stir fry egg plants for about 3 minutes, remove and set aside

  4. Heat 1 tablespoon cooking oil, stir fry garlic until fragrant.

  5. Add in pork, red chili, spring onion, egg plants, red chili bean paste, soy sauce, sugar, and water; simmer over medium heat for 5 minutes until pork is cooked and egg plants are soft

  6. Add in cornstarch mixture, stir well until sauce is thickened

  7. Sprinkle with sesame oil

  8. Ready to serve
