Chinese Fried Egg Plants Recipe

Ingredients:

egg plants (long type)

5
oz ground pork

spring onion, finely minced

slices ginger, finely minced

1/4 teaspoon salt

teaspoon dry sherry
-
1/2 teaspoon cornstarch

1/4 teaspoon white pepper

cups cooking oil
Fried
Starch:
-

tablespoons flour

egg
-
1
teaspoon salad oil

1
cup water

Method:
-
Cut the egg plant diagonally to about 1/2 inch thick
sections. Make a cut at the middle of the egg plant slices
(don't break the egg plant into 2)

Mix spring onion, ginger, ground pork, salt, dry sherry,
cornstarch and white pepper well.

Spoon enough meat mixture and fill into egg plant slice
(press the meat mixture into the egg plant with slight
force)

Mix well fried starch ingredients. Coat the egg plant with
meat mixture with fried starch mixture.

Heat wok and cooking oil over medium heat. Fry the egg plant
for 6 minutes, remove and set aside

Repeat step 4 and 5 for all the egg plants

Heat the wok and cooking oil over high heat. Coat all the
egg plants again with fried starch mixture. Fry the egg
plants for another 15 second until golden brown

Drain on paper towels
-
Ready to serve
