Chinese Crabmeat Tofu Recipe

Ingredients:

cakes fresh tofu
-
3
tablespoons peanut oil
-
2
scallions, chopped
-
2
inches ginger root, peeled and chopped

1
1/2 teaspoons salt
-
3
tablespoons chicken stock
-
8
oz crabmeat, flaked without shell

1/2 teaspoon cornstarch dissolved in 5 teaspoons water
-
5
watercress sprigs

Method:
-
Slice each tofu into 1/4 inch slices, and then cut each
slice into half
-
Heat wok and oil over high heat. Stir fry scallion and
ginger for 1 minute
-
Add tofu, salt and stock; bring to boil for 3 minutes
-
Stir in crabmeat and cook for 1 minute
-
Stir in cornstarch until the sauce is thickened
-
Garnish with watercress
-
Ready to serve
