Bean Curd Noodle and Celery Salad Recipe

Ingredients:

  • 4 oz bean curd noodles

  • 1/2 cup celery, cut into 2 inch strips

  • Hot red pepper, shredded (to taste)

  • 4 cups water

  • 2 teaspoons baking soda

  • 1 teaspoon salt

  • 1 teaspoon sesame oil

Method:

  1. Blanch the celery in boiling water; remove and plunge in cold water; remove and drain.

  2. Bring 4 cups water to a boil; add baking soda. When baking soda had dissolved, add noodles; stir with chopsticks to separate the noodles.

  3. Turn off the heat; let stand for 15 minutes. When the noodles become white (soft), remove and plunge them into cold water. Rinse several times to remove the baking soda solution.

  4. Mix the noodles, celery, hot red pepper, salt and sesame oil together; serve.
