Winter Melon with Spareribs Soup Recipe

Ingredients:

  • 1 lb winter melon

  • 12 cups water

  • 1/2 lb spareribs, cut into pieces

  • 25 dried lotus seeds

  • 10 red dates

  • 1 inch ginger, crushed

  • Pinch of salt to taste

Method:

  1. Blanch spareribs in boiling water for 5 minutes, drain

  2. Wash winter melon and cut into large chunks.

  3. Pour water into a large pot, put in winter melon and bring to boil

  4. Add in the spareribs, and the rest of the ingredients. Bring to boil, and then simmer it over low heat for 3 hours

  5. Add salt to taste

  6. Ready to serve
