Lotus Root with Spareribs Soup

Ingredients:

lb lotus root
-
1/2 lb spareribs
-
6
cups water
-
15 red dates, lightly sliced
-
10 whole white pepper, crushed
-
Pinch of salt to taste

Method:
-
Skin and cut lotus root into thin slices; cut spareribs into
pieces; wash the red dates
-
Boil water in a large pot, add in spareribs, lotus root, red
dates and crushed whole white pepper
-
Cover and boil for 2 1/2 hours over medium heat or until the
spareribs are tender
-
Add in salt to taste
-
Ready to serve
