Lotus Root with Spareribs Soup Recipe

Ingredients:

  • 1 lb lotus root

  • 1/2 lb spareribs

  • 6 cups water

  • 15 red dates, lightly sliced

  • 10 whole white pepper, crushed

  • Pinch of salt to taste

Method:

  1. Skin and cut lotus root into thin slices; cut spareribs into pieces; wash the red dates

  2. Boil water in a large pot, add in spareribs, lotus root, red dates and crushed whole white pepper

  3. Cover and boil for 2 1/2 hours over medium heat or until the spareribs are tender

  4. Add in salt to taste

  5. Ready to serve
