In Chinese tradition, soup has played a
very important role in Chinese life, especially in Chinese daily
meals. At ordinary Chinese home meals, there is usually a common
bowl of soup on table for family members to drink at anytime during
the meals.
Chinese believes that soup contains the best essence of the
ingredients, as soups are mostly slowly cooked, boiled, or simmered
for hours. With this, Chinese believes soup is one of the best
dishes to help rejuvenating or even healing the body.
Different kinds of ingredients are used in Chinese soup recipes. At
least one type of meats or seafood will be used to give flavor and
also "meat" essence to the soup, and combined with other side
ingredients such as vegetables, eggs and Chinese herbs. Every single
combination of ingredients will help to rejuvenate different parts
of the body. For example, bird's nest soup will help to beautify the
skin, chicken ginseng soup will help to raise the "qi" of the body,
and fish soup will help to heal the wounds.
Most of the Chinese soup recipes listed here are unknown to
Westerners, as only a few "common" soups such as hot and sour soup,
wonton soup and shark's fin soup, are served in restaurants.
Although Chinese food has been well known and wide spread to other
parts of the world, Chinese soup is still fairly "new" to other
ethnic groups.
Surprisingly, soup is one of the easiest-to-cook dishes. And it goes
well with either rice or noodle. For busy moms, homemakers or
working women, you can even put everything into crock-pot or slow
cooker in the morning, and the soup will be ready by the lunch /
dinner time, as simple as that. Soup can be drunk, and the
ingredients will taste well with some oyster sauce or soy sauce.
