Bird's Nest with Mushrooms Soup Recipe

Ingredients:

  • 8 oz bird's nest

  • 1 tablespoon oil

  • 1 tablespoon chopped ginger root

  • 4 oz cooked chicken, cut into bite size cubes

  • 4 oz button mushrooms, quartered

  • 8 oz canned quail eggs, drained

  • 8 cups chicken stock

Method:

  1. Soak bird's nest for 5 hours, remove feather with tweezer

  2. Heat oil in saucepan, fry ginger for 1 minute

  3. Stir in chicken, mushrooms, eggs and stock; bring to boil

  4. Add in bird's nest and simmer over low heat for 10 minutes, stir constantly

  5. Ready to serve
