Bird's Nest with Mushrooms Soup

Ingredients:

oz bird's nest

tablespoon oil

tablespoon chopped ginger root

oz cooked chicken, cut into bite size cubes

oz button mushrooms, quartered

oz canned quail eggs, drained

cups chicken stock

Method:

Soak bird's nest for 5 hours, remove feather with tweezer

Heat oil in saucepan, fry ginger for 1 minute

Stir in chicken, mushrooms, eggs and stock; bring to boil

Add in bird's nest and simmer over low heat for 10 minutes,
stir constantly
-
Ready to serve
