Stir Fried Squid with Dried Red Peppers Recipe

Ingredients:

  • 2 presoftened dried squids (about 2/3 lb)

  • 3 dried red peppers, cut into pieces

  • 1 teaspoon chopped garlic clove

Ingredients A:

  • 3 tablespoons soy sauce

  • 1 tablespoon sugar

  • 1/2 tablespoon white vinegar

  • 1/2 tablespoon sesame oil

  • 1 1/2 tablespoons water

  • 2 teaspoons cornstarch

Method:

  1. Rinse the squids and cut off the heads, tentacles, and tails. Peel off the thin membrane from the surface of the squid. Cut each squid into 4 strips. Score the inside surface lengthwise and crosswise then cut it into bite size pieces

  2. Bring a pot of water to a boil; blanch the pieces of squid for 20 seconds or until half cooked. When the pieces of squid curl up slightly, remove and drain them.

  3. Heat the wok then add 2 tablespoons oil. Stir fry the dried red peppers until fragrant. Add chopped garlic and squid; stir to mix.

  4. Add Ingredients A and turn heat to high; mix quickly. Transfer to a serving platter; serve
