Stir Fried Shrimp with Green Peas Recipe

Ingredients:

• 1/2 lb raw, shelled shrimp

• 1/2 cup oil for frying

• 1 green onion, cut into 6 pieces

• 6 slices ginger root

• 1 cup green peas, precooked

Ingredients A:

• 1/4 teaspoon salt

• 1 teaspoon cooking wine or sherry

• 1/3 egg white

• 3/4 tablespoon cornstarch

Ingredients B:

• 1/3 teaspoon cooking wine or sherry

• 1/3 teaspoon salt

• 1/3 teaspoon sesame oil

• Dash of black pepper

• 1 teaspoon cornstarch

• 2 tablespoons water

Method:

1. Rinse and devein the shrimp; drain. Place the shrimp in a bowl; add Ingredients A in order listed. Mix after each addition. Before frying, add 1 tablespoon oil and mix. The shrimp will separate easily during frying.

2. Mix Ingredients B in a bowl, let stand for later use.

3. Heat the wok then add oil. Fry the shrimp over medium heat until cooked (precooked). Remove the shrimp then remove the oil.

4. Reheat the wok then add 1 tablespoon oil. Stir fry the green onion and ginger root until fragrant. Add the green peas; stir; add shrimp, and Ingredients B; turn heat to high and quickly stir to mix.

5. Transfer to a serving platter; serve.
