Stir Fried Shrimp Over Crispy Rice Recipe

Ingredients:

• 1/2 lb raw shelled shrimps

• 3 cups oil for frying

• 1/4 cup green peas, precooked

• 5 oz glutinous rice cakes

• 2 tablespoons cornstarch dissolved in 2 tablespoons water

Ingredients A:

• 1 teaspoon cooking wine or sherry

• 1/4 teaspoon salt

• 1/3 egg white

• 3/4 tablespoon cornstarch

Ingredients B:

• 3 tablespoons ketchup

• 1 tablespoon sugar

• 3/4 teaspoon salt

• 3 cups water

Method:

1. Rinse and devein the shrimp; pat to dry. Separately add Ingredients A in order given; mix after each addition. Cut the rice cake into 1 1/2-inch squares

2. Heat the wok then add 2 tablespoons oil. Add Ingredients B and bring to a boil. Add green peas and shrimps; cook over medium heat for 2 minutes. Add cornstarch mixture to thicken; stir. Add 1 tablespoon oil and stir. Pour the shrimp mixture into a large bowl

3. Heat the wok then add oil. Deep fry the rice cake squares until golden brown; remove and drain. Arrange the rice cake squares on a serving plate; pour shrimp mixture over rice cake squares; serve.
