Stir Fried Abalone with Straw Mushrooms Recipe

Ingredients:

  • 1 1lb can abalone

  • 2 cups straw mushrooms

  • 12 stalks bok choy

  • 1 green onion, cut into 6 pieces

  • 6 slices ginger root

  • 1 tablespoon cornstarch dissolved in 2 tablespoons water

Ingredients A:

  • 1/2 tablespoon cooking wine or sherry

  • 1 cup stock

  • 2 tablespoons oyster sauce

  • 1 tablespoon soy sauce

  • Dash of sesame oil

  • Dash of sugar

Method:

  1. Make 1/4 inch wide and 1/2 inch deep cuts across the abalone. Turn the abalone 45 degree; then cut into paper thin slices. Remove any wilted leaves from the bok choy; cut it into 3 inch pieces. Boil half a pot of water. Separately blanch the bok choy and straw mushrooms for 3 minutes each

  2. Heat the wok then add 3 tablespoons oil; stir fry the bok choy and add a dash of salt. Remove and arrange around the platter

  3. Reheat the wok then add 3 tablespoons oil. Stir fry the onions and ginger root until fragrant. Stir fry the mushrooms and add Ingredients A; bring to a boil.

  4. Add cornstarch mixture to thicken; stir. Add the abalone slices, stir to mix. Transfer to the center of serving platter; serve.
