Ingredients:

  • 1 1/3 lbs soft shelled crabs

  • Cornstarch, for coating

  • oil for frying

  • 1 green onion, cut into 6 pieces

  • 6 slices ginger root

  • Dash of sesame oil

Ingredients A:

  • 1 1/2 tablespoons sweet bean paste

  • 1 tablespoon cooking wine or sherry

  • 1 tablespoon soy sauce

  • 1/2 tablespoon sugar

  • 1/2 cup water

Method:

  1. Clean the crabs and cut them into pieces. Dip the open ends (meat) of crabs into the cornstarch

  2. Heat the wok then add oil. Fry the pieces of crabs for 2 minutes, or until golden brown; remove and drain. Remove the oil from the wok

  3. Reheat the wok then add 3 tablespoons oil. Stir fry the onion and ginger root until fragrant. Add Ingredients A and bring to a boil. Add the pieces of crab; stir to mix. Transfer to a serving plate; serve.
