Chinese Stir Fry Scallops with Asparagus Recipe

Ingredients:

• 1 lb scallops, thawed

• 16 oz canned asparagus spears, drained

• 1/4 lb chicken, cut into thin slices

• 1 teaspoon salt

• 3 teaspoons cornstarch

• 1/4 cup oil

• 1 tablespoon dry sherry

• 1/2 teaspoon sugar

• 1 1/2 cup chicken broth

• 3 tablespoons water

Method:

1. Cut scallops into chunks

2. Cut 2/3 of asparagus into 2 inch pieces, and set aside 1/3 of asparagus for garnish

3. Sprinkle the chicken with half the salt and 1/2 teaspoon cornstarch

4. Heat wok and oil over medium heat. Stir fry chicken for 15 seconds. Add scallops and stir fry for another 15 seconds.

5. Add asparagus pieces, sherry, sugar and remaining salt, stir in the broth and bring to boil

6. Dissolve the remaining cornstarch in water and add to wok. Simmer and stir until the sauce is thickened.

7. Transfer to a serving plate and garnish with the asparagus

8. Ready to serve
