Tasty Chinese Ham Slices Recipe

Ingredients:

  • 2 2/3 lbs fresh ham

Ingredients A:

  • 2 tablespoons salt

  • 1 teaspoon Szechuan peppercorns

Ingredients B:

  • 2 green onions

  • 2 slices ginger root

  • 1 tablespoon cooking wine or sherry

  • 8 cups water

Ingredients C:

  • 1/2 tablespoon soy sauce

  • 1/2 tablespoon white vinegar

  • 1 teaspoon sugar

  • 1 teaspoon chopped ginger root

  • 1 teaspoon chopped green onion

Method:

  1. Clean the ham then pat it dry. Rub the ham with niter. Stir fry Ingredients A until the salt is golden; remove and rub it into the surface of the ham. Marinade for 3 days

  2. Rinse the ham lightly; place it in a pot and add Ingredients B; cook for 1 hour over low heat, or until the meat is cooked. Remove when cooked and wrap it tightly with a dish towel. Place a heavy weight on top of the ham to compress it. Let cool. Unwrap the ham and cut it into slices. Arrange the slices on a serving plate.

  3. Place Ingredients C in a bowl and mix; serve with sliced ham as dipping sauce.
