Stir Fried Shredded Meat with Pickled Rape Recipe

Ingredients:

  • 1/2 lb pork tenderloin, beef or chicken meat

  • 1/2 cup oil for frying

  • 1 cup chopped pickled rape

  • 1 cup shredded bamboo shoot

Ingredients A:

  • 1/2 tablespoon cooking wine or sherry

  • 3/4 tablespoon soy sauce

  • 1 tablespoon water

  • 3/4 tablespoon cornstarch

Ingredients B:

  • 1 tablespoon cooking wine or sherry

  • 1 tablespoon soy sauce

  • Dash of sugar

  • 1/2 tablespoon sesame oil

  • 4 tablespoons chopped green onion

Method:

  1. Shred the meat; mix with Ingredients A. Add 1 tablespoon oil to meat and mix before frying so that the shredded meat will separate easily during frying

  2. Heat the wok then add oil. Stir fry the meat and remove. This is precooking. Remove the oil from wok. Reheat the wok then add 1 tablespoon oil. Stir fry pickled rape; move the pickled rape aside. Add 1 tablespoon oil; stir fry bamboo shoot; add shredded meat and Ingredients B (include the pickled rape in the mixture). Turn the heat to high and quickly stir fry; remove and serve
