Method:

Shred
the meat; mix with Ingredients A. Add 2 tablespoons and stir
before frying so that the shredded meat will separate easily
during frying

Heat
the wok then add oil. Stir fry the meat; remove (precooking).
Remove the oil from the wok

Heat
the wok then add 2 tablespoons oil. Stir fry Ingredients B until
fragrant. Add water chestnuts and wood ears; stir to mix. Return
the meat to the wok and add Ingredients C. Turn heat to high;
quickly stir to mix. Remove and serve
