Stir Fried Pork Rolls with Broccoli Recipe

Ingredients:

  • 2/3 lb pork loin

  • Cornstarch for coating

  • Oil for frying

  • 3 Chinese black mushrooms

  • 12 1 1/2 inch pieces green onion

  • 2/3 lb Chinese broccoli

Ingredients A:

  • 1/3 teaspoon salt

  • 1/2 tablespoon cooking wine or sherry

  • 1 egg yolk

  • 1/2 tablespoon cornstarch

Ingredients B:

  • 1/2 tablespoon cooking wine or sherry

  • 1/2 tablespoon soy sauce

  • 2 tablespoons water

  • 1/3 teaspoon salt

  • 1 teaspoon sugar

  • 1 teaspoon cornstarch

  • Dash of sesame oil

Method:

  1. Cut pork loin into 12 slices. Use a meat mallet to tenderize the meat.

  2. Mix with Ingredients A and marinate until ready for use. Soak the black mushrooms in water until soft, cut into 12 julienne strips.

  3. Place 1 slice meat on the working surface. Place 1 piece each black mushroom and green onion at one end of the meat then roll it up. Place the roll in a bowl of cornstarch to coat

  4. Remove any any wilted leaves from the broccoli; cut into long pieces. Cook in boiling water; remove and plunge them into a bowl of cold water

  5. Heat the wok then add oil. Deep fry the meat rolls for 3 minutes or until golden brown. Remove and drain. Remove the oil from the wok

  6. Reheat the wok then add 2 tablespoons oil. Stir fry broccoli; add the meat rolls and Ingredients B. Turn heat to high, quickly stir to mix. Remove to a serving dish and serve
