Spicy Chinese Szechuan Pork Recipe

Ingredients:

  • 2 lbs boneless pork loin, cut into thin strips

  • 6 tablespoons soy sauce

  • 2 tablespoons cornstarch

  • 1 tablespoon oil

  • 1/2 cup roasted peanuts

  • 1 teaspoon crushed red pepper

  • 1/2 teaspoon minced ginger

  • 1/2 cup chicken broth

  • 3 tablespoons rice wine vinegar

  • 3 tablespoons dry white wine

  • 1 teaspoon sugar

  • 1 red bell pepper, cut into strips

  • 1/2 lb pea pods

  • 2 tablespoons water

Method:

  1. Marinade pork strips with 3 tablespoons soy sauce and 1 tablespoon cornstarch for 40 minutes

  2. Heat 1 teaspoon oil in wok, stir fry peanuts and crushed red pepper over medium heat for 3 minutes, set aside

  3. Add in remaining oil, stir fry pork and ginger until light browned

  4. Add broth, vinegar, 3 tablespoons soy sauce, wine and sugar. Cover and simmer for  3 minutes

  5. Add red bell pepper and pea pods, cook for 2 minutes

  6. Add 1 tablespoons cornstarch and water. Cook and stir until the sauce is thickened. Stir in peanut mixture

  7. Ready to serve
