Sliced Kidneys in Hot Sauce Recipe

tablespoon Szechuan peppercorns

Method:

Slice
the kidneys horizontally in half; remove the white membrane from
the center. Make four or five vertical cuts on the surface of
the kidney (do not cut through). Turn the slices of kidney so
that the cuts are in horizontal position. Diagonally cut thin
slices along the horizontal cuts to form scalloped edge. Soak
the sliced kidney in cold water to clean them

Place
the shredded bean thread strips in hot water; stir quickly to
separate, remove.

Drain
the water from the slices of kidney; blanch them in boiling
water for about 20 seconds. When the slices of kidney turn
white, remove and plunge them into cold water

Place
Ingredients A in a bowl and mix with Ingredients B (sauce)

Arrange the bean thread strips on a plate; drain the kidney
slices and place them on top of bean thread strips. Pour the
sauce over the slices of kidney. Mix before serving.
