Saucy Ham Recipe

Ingredients:

  • 2 2/3 lbs fresh ham

  • 4 tablespoons sweet bean paste

  • 2 tablespoons cooking wine or sherry

  • 2 tablespoons sugar

  • 8 tablespoons soy sauce

  • 6 cups water

  • 1/4 teaspoon five spice powder

  • 1 green onion, cut into 4 pieces

  • 2 slices ginger root

Method:

  1. Clean the fresh ham then place it in a deep pot. Place bean paste in a bowl; and sweet bean paste, cooking wine, sugar, soy sauce in order shown, mix after each addition.

  2. Add mixture from step 1 and water, five spice powder, green onion and ginger root to the pot. Cook over low heat for about 2 hours, or until meat is cooked and the liquid has reduced to 1/2 cup. If there is too much liquid turn the heat to high and cook longer until liquid reduced to 1/2 cup. Remove the ham; retain liquid.

  3. After the ham is cool, cut it into thin slices. Arrange the slices on a serving plate. Pour the retained liquid on top of the ham.
