Mushu Pork Recipe

Ingredients:

  • 1/2 lb lean pork, shredded

  • 1 tablespoon soy sauce

  • 9 tablespoons oil

  • 6 eggs, beaten

  • 2 tablespoons dry wood ears, soaked for 20 minutes and drained. Cut into thin strips

  • 2 scallions, shredded

  • 1/2 teaspoon sugar

  • 6 mushrooms, cut into strips

Method:

  1. Mix the pork with soy sauce

  2. Heat 6 tablespoons oil over high heat. Add eggs and stir fry until set

  3. Cut the eggs into strips using spatula, and transfer to a plate

  4. Add the remaining oil, stir fry pork, mushrooms, scallions and wood ears until the pork is cooked

  5. Add the egg pieces and sugar, mix well. Stir fry for 2 minutes

  6. Ready to serve
