Glazed Ham Slices Recipe

Ingredients:

  • 2/3 lb precooked Chinese ham, cut into 24 slices, 3 inches wide

  • 4 oz red dates

  • 1/2 loaf white bread, not sliced

Ingredients A:

  • 6 tablespoons rock sugar or granulated sugar

  • 2 tablespoons cooking wine or sherry or fermented rice wine

Ingredients B:

  • 1 teaspoon cornstarch

  • 1 tablespoon water

Method:

  1. Layer the sliced ham in a medium size bowl, pack tightly. Spread sthe dates on top of the slices of ham. Add mixture Ingredients A; steam for 2 hours. Remove the bowl of slices ham and place a large plate over the bowl; tilt to drain the liquid (retain liquid for future use). Invert the bowl on to the plate and remove the bowl

  2. Bring the retained liquid to a boil, if liquid does not equal 1 cup, add water. Add mixture Ingredients B to thicken; stir and pour over the sliced ham

  3. Cut off the crust from the bread; cut it into slices 3/5" thick. Do not cut through the first slice; cut through the second slice (a pocket is formed). Continue cutting the entire loaf in this manner. Steam the slices of bread to soften them. Place the slices of ham between the slices of bread to serve as sandwiches.
