Double Cooked Pork Slices Recipe

Ingredients:

  • 1/2 lb precooked ham

  • 2/3 cup sliced, pressed bean curd

  • 4 oz or 1/4 lb cabbage

  • 1 fresh garlic

  • 1/2 tablespoon cooking wine or sherry

  • 1 teaspoon hot bean paste

  • 1 tablespoon sweet bean paste

  • 1 tablespoon soy sauce

  • Dash of sugar

 

Method:

  1. Slice the precooked ham. Cut the cabbage into bite size pieces. Diagonally cut the fresh garlic into small pieces; separate the white and green pieces.

  2. Mix cooking wine, hot bean paste, sweet bean paste, soy sauce and sugar together in a bowl and set aside for later use

  3. Heat the wok then add 2 tablespoons oil. Stir fry the cabbage and 1 tablespoon water over high heat until the cabbage is soft; remove

  4. Reheat the wok then add 2 tablespoons oil. Stir fry the ham. Add the pressed bean curd; stir fry to mix. Remove.

  5. Add the white pieces of garlic, stir fry until fragrant. Add mixture from step 2 and bring to a boil.

  6. Add ham and pressed bean curd; stir to mix. Add cabbage; stir to mix. Sprinkle in the green pieces of garlic; remove and serve
