Ching Du Pork Back Ribs Recipe

Ingredients:

  • 1 lb pork back ribs

  • 1 1/2 tablespoons cornstarch

  • Oil for frying

Ingredients A:

  • 3/4 teaspoon salt

  • 3/4 teaspoon sugar

  • 1/2 tablespoon cooking wine or sherry

  • 1/2 tablespoon chopped garlic clove

Ingredients B:

  • 1 tablespoon worcestershire sauce

  • 1 1/2 tablespoons ketchup

  • 1/2 tablespoon sugar

  • 1 1/2 tablespoons water

  • Dash of sesame oil

Method:

  1. Cut the ribs into 15 pieces; mix with Ingredients A. Add cornstarch and mix thoroughly

  2. Heat the wok then add oil. Deep fry the ribs over medium heat for about 4 minutes, or until golden brown; remove. Reheat the oil; deep fry the ribs again for 1 minute. Remove and drain.

  3. Bring Ingredients B to a boil. Add deep fried ribs; stir fry over high heat until liquid has almost completely evaporated. Remove and serve
