Sweet and Sour Fish Recipe

Ingredients:

  • 10 oz fish fillet

  • 1 egg

  • 1/2 cup cornflour

  • 1/2 cup cooking oil

  • 1 slice ginger

  • 1 shallot

  • 1 clove garlic

  • 2 tablespoons pickled vegetables

  • 2 tablespoons oil

Fish Marinade:

  • 1 teaspoon soy sauce

  • 1/2 teaspoon sugar

  • 1 teaspoon cornflour

  • Pinch of pepper

  • 1/2 teaspoon sesame oil

  • 1 egg white

Seasoning:

  • 1 teaspoon wine

  • 1/2 cup sweet and sour sauce

  • 1 teaspoon soy sauce

  • 1/2 teaspoon sugar

  • Pinch of pepper

Gravy Mix:

  • 2 teaspoons cornflour

  • 2 tablespoons water

  • 1 teaspoon sesame oil

Method:

  1. Slice the fish into thin slices. Mix the marinade ingredients and immerse the fish into solution for 1 hour, turning every 15 minutes

  2. Beat the egg and soak the fish into to coat evenly. Remove and dredge with cornflour then press lightly

  3. Heat 1/2 cup oil and deep fry the fish until golden brown. Drain and arrange on  the platter

  4. Shred ginger and pickled vegetables finely. Slice shallot and garlic.

  5. Heat wok and 2 tablespoons oil, saute ginger, shallot and garlic till fragrant. Put in seasoning and pickled vegetables. Thicken the sauce with gravy mix. Scoop over the fish

  6. Ready to serve
