Stir Fry Fish Fillet in Wine Sauce Recipe

Ingredients:

  • 2 lbs fish fillet (any white fish), cut into bite size pieces

  • 1 1/2 teaspoons salt

  • 1 tablespoon cornstarch

  • 2 egg whites, beaten lightly

  • 1 cup oil

  • 3 tablespoons dried wood ears, soak for 20 minutes, drained and stemmed

  • 2 cloves garlic, minced

Sauce:

  • 2 slices ginger root, minced to extract juice

  • 1/2 cup dry white wine

  • 1/2 cup chicken stock

  • 1 teaspoon sugar

  • 1 tablespoon cornstarch, dissolved in  3 tablespoons water

Garnish:

  • Few scallions, chopped

Method:

  1. Sprinkle salt onto fish piece and coat with cornstarch. Mix egg white with 1 1/2 teaspoon oil, dip the fish into this mixture

  2. Heat the remaining oil over medium heat. Fry the fish pieces, few at a time, for about 2 minutes until crisp and golden

  3. Drain and keep warm the fish, set aside. Pour away everything except 1 tablespoon of oil

  4. Add the wood ears and garlic, stir fry for few minutes

  5. Combine sauce ingredients and pour into the wok. Cook and stir for 2 minutes and until the sauce is thickened

  6. Return the fish to the wok. When the sauce returns to boil, lower the heat and simmer for 45 seconds

  7. Ready to serve
