Stir Fry Fish Fillet in Wine Sauce

Ingredients:

lbs fish fillet (any white fish), cut into bite size pieces

1/2 teaspoons salt

tablespoon cornstarch

egg whites, beaten lightly

cup oil

3
tablespoons dried wood ears, soak for 20 minutes, drained
and stemmed

cloves garlic, minced
Sauce:
-

slices ginger root, minced to extract juice

1/2 cup dry white wine
-
1/2 cup chicken stock
-
1
teaspoon sugar
-
1
tablespoon cornstarch, dissolved in 3 tablespoons
water
Garnish:

Method:

Sprinkle salt onto fish piece and coat with cornstarch. Mix
egg white with 1 1/2 teaspoon oil, dip the fish into this
mixture

Heat the remaining oil over medium heat. Fry the fish
pieces, few at a time, for about 2 minutes until crisp and
golden

Drain and keep warm the fish, set aside. Pour away
everything except 1 tablespoon of oil

Add the wood ears and garlic, stir fry for few minutes
-
Combine sauce ingredients and pour into the wok. Cook and
stir for 2 minutes and until the sauce is thickened
-
Return the fish to the wok. When the sauce returns to boil,
lower the heat and simmer for 45 seconds

Ready to serve
