Steamed Pomfret Recipe

Ingredients:

whole pomfret ( about 1 2/3 lbs)

cup shredded pork tenderloin

1/4
cup shredded Szechuan pickled mustard greens

tablespoons shredded Chinese black mushroom

tablespoon soy sauce

cup shredded green onions

Dash
of black pepper

tablespoons oil

Method:

Scale
and clean the fish. Rub the exterior and interior surface of teh
fish with mixture Ingredients A. Place the fish on a heatproof
platter.

Sprinkle the shredded pork, mustard greens, and Chinese black
mushrooms on top of the fish. Sprinkle 1 tablespoon soy sauce on
top. Put 1 cup of water in the wok; bring it to boil

Place
the heatproof platter, with the fish, in the wok. Steam over
high heat for 10 to 15 minutes, or until the meat is just
cooked.

Remove the fish to a serving plate, retain the liquid from the
heatproof platter. Sprinkle shredded green onion and dash of
black pepper on the fish.

Place
3 tablespoons oil in a hot wok. When the oil very hot, drizzle
it over the fish. Drizzle the retained liquid on top of the fish
Steaming time may be vary due to size and thickness of fish. Use
of gas or electric heat may cause a slight variation in cooking
time.
