Steamed Fish with
Black Beans Recipe

Ingredients:

2lbs whole sea bass, cleaned

1/2 teaspoon salt

Pinch of pepper

tablespoons cornstarch

1
tablespoon salted black beans, soaked for 10 minutes,
drained and minced

cloves garlic, minced
-
1
teaspoon minced ginger root
-
1
scallion, finely chopped
-
2
tablespoons oil
-
1
tablespoon soy sauce
-
2
tablespoons dry sherry
-
Shredded scallions to garnish

Method:

Rub the fish inside out with salt and pepper, and then coat
with cornstarch

Place the fish on a heatproof plate. Mix the black beans
with garlic, ginger, and scallion. Spoon black bean mixture
over fish and sprinkle with oil, soy sauce and sherry. Place
in a steamer and steam for 20 minutes

Transfer the fish to a serving plate. Spoon the sauce over
and garnish with the scallions.
