Steamed Fish with Black Beans Recipe

Ingredients:

  • 1 2lbs whole sea bass, cleaned

  • 1/2 teaspoon salt

  • Pinch of pepper

  • 2 tablespoons cornstarch

  • 1 tablespoon salted black beans, soaked for 10 minutes, drained and minced

  • 2 cloves garlic, minced

  • 1 teaspoon minced ginger root

  • 1 scallion, finely chopped

  • 2 tablespoons oil

  • 1 tablespoon soy sauce

  • 2 tablespoons dry sherry

  • Shredded scallions to garnish

Method:

  1. Rub the fish inside out with salt and pepper, and then coat with cornstarch

  2. Place the fish on a heatproof plate. Mix the black beans with garlic, ginger, and scallion. Spoon black bean mixture over fish and sprinkle with oil, soy sauce and sherry. Place in  a steamer and steam for 20 minutes

  3. Transfer the fish to a serving plate. Spoon the sauce over and garnish with the scallions.

  4. Ready to serve
