Simmered Fish Halves Recipe

Ingredients:

lbs fish halves (tail end)

green onion, cut into 6 pieces

slices ginger root

stalk fresh garlic

tablespoon cornstarch dissolved in 1 tablespoon water

teaspoon white vinegar

teaspoon sesame oil
Ingredients
A:

tablespoons soy sauce

tablespoon sugar

1 cup
water

Dash
of black pepper

Method:
-
Scale
and clean the fish. Cut it in half lengthwise to remove bones;
cut each half in thirds, do not cut through the tail (to total
of 12 sections)

Cut
the garlic into several pieces then shred finely lengthwise.
Soak it in water for 5 minutes; remove and drain

Heat
the wok then add 4 tablespoons oil. Stir fry the green onion and
ginger root until fragrant. Add fish, skin side down; fry for 20
seconds, or until golden brown. Turn the fish over.

Add
Ingredients A; cover and turn heat to low. Simmer for 5 minutes;
when the liquid has reduced to half its original amount, add
cornstarch mixture, stir lightly

Sprinkle with vinegar and sesame oil; place on serving plate.
Sprinkle the finely shredded garlic on top; serve.
