Fish Slices in Tomato Sauce Recipe

Ingredients:

  • 2/3 lb fish meat

  • 1/2 cup oil for frying

  • 1 small tomato, cut into bite size pieces

  • 1 small brown onion, cut into bite size pieces

  • 1/4 cup green peas, precooked

Ingredients A:

  • 1/3 teaspoon salt

  • 1/2 tablespoon cooking wine or sherry

  • 1/2 egg white

  • 1 tablespoon cornstarch

Ingredients B:

  • 3 tablespoons ketchup

  • 6 tablespoons water

  • 1/2 tablespoon sugar

  • 1/2 teaspoon salt

  • 1/2 teaspoon sesame oil

  • 1 teaspoon cornstarch

Method:

  1. Cut fish meat into 1/4 inch thick slices, mix with Ingredients A. Add 2 tablespoons oil and mix before frying. The slices will separate easily during frying

  2. Heat the wok then add 1/2 cup oil. Fry the fish slices until half cooked. Remove the fish. Remove the oil from the wok.

  3. Reheat the wok then add 1 tablespoon oil. Stir fry the pieces of onion until fragrant. Add the tomato and stir. Add Ingredients B and fish slices; bring to boil. Add green peas; stir to mix. Transfer to a serving plate, serve.
