Method:

Place
the fish strips in a bowl and mix with Ingredients A. Beat the
egg whites until stiff (about 5 minutes). Add Ingredients B to
the egg whites to make a thick batter

Heat
the wok then add oil. Separately dip each fish strips in the egg
white batter then put into the wok. Deep fry for about 3
minutes, or until the fish is cooked. Remove and drain. Serve,
use Szechuan peppercorn salt for dipping.
Shrimps, chicken meat, beef or pork may be used instead of fish.
