Deep Fried Fish Strips Recipe

Ingredients:

  • 2/3 lb fish meat, cut into 1/2-inch strips

  • 3 egg whites

  • Oil for frying

  • Dash of Szechuan peppercorn salt

Ingredients A:

  • 1/2 tablespoon cooking wine or sherry

  • 1/3 teaspoon salt

  • 1/2 egg white

  • 1 tablespoon cornstarch

Ingredients B:

  • 2 tablespoons cornstarch

  • 2 tablespoons flour

  • Dash of salt

Method:

  1. Place the fish strips in a bowl and mix with Ingredients A. Beat the egg whites until stiff (about 5 minutes). Add Ingredients B to the egg whites to make a thick batter

  2. Heat the wok then add oil. Separately dip each fish strips in the egg white batter then put into the wok. Deep fry for about 3 minutes, or until the fish is cooked. Remove and drain. Serve, use Szechuan peppercorn salt for dipping.

Shrimps, chicken meat, beef or pork may be used instead of fish.
