Cook
the salty eggs in boiling water until hard boiled. Shell and
dice them into 1/2 inch cubes. Dice the thousand year old egg
into 1/2 inch cubes
Beat
the chicken eggs then mix them with salt, lard or sesame oil and
water; add the diced eggs; mix. Lightly oil a 6"X4" mold or box;
pour the egg mixture into the mold then place it in a steamer.
Steam
over medium heat for 20 minutes, or until the eggs are firm;
remove the mold from the steamer and let cool. Invert the mold
to remove the steamed eggs. Slice and arrange them on a serving
plate; serve
