Cut
each yolk in half lengthwise then pat to shape thin round
paddles
Thoroughly mix the pork with Ingredients A. Shape the mixture
into a paddy 7 1/2 inches in diameter. The center should be
thinner than the outer edges; slightly concave shape. (it is
more convenient to form this meat patty on a heatproof plate.)
Arrange the egg yolk paddies on the meat patty. Pour the egg
white on the egg yolks and meat. Place in a steamer and steam
for 20 minutes over high heat, or until cooked. Remove and
serve.
