Chinese Tomato Fried Egg

Ingredients:

  • 2 tomatoes

  • 3 eggs

  • 2 teaspoons rice wine

  • Pinch of salt

  • 2 tablespoons oil

  • 2 tablespoons chicken stock

Method:

  1. Cut tomatoes crossway into thick slices

  2. Beat the eggs with rice wine and salt

  3. Heat the wok and oil an fry tomatoes for 2 minutes over medium heat

  4. Add little salt on the tomatoes and then eggs

  5. Stir fry for 1 minute, as for scrambled egg, then our in chicken stock and cook for another 2 minutes
