Chinese Sam Wong Egg Recipe

Ingredients:

  • 2 eggs, beaten

  • 1 teaspoon salt

  • 1 1/2 cups chicken stock

  • 2 salted eggs, shelled and cut into 8 wedges

  • 2 pickled eggs (100-year-old egg / century egg), shelled and cut into 8 wedges

  • 1 1/2 tablespoons shredded smoked ham

  • 1 1/2 tablespoons shredded scallions

Method:

  1. Beat eggs with salt and stock in a bowl.

  2. Arrange salted egg  and pickled egg wedges alternately around the edge of a deep heatproof dish

  3. Pour stock mixture into the center

  4. Sprinkle the ham and scallions over the beaten egg mixture.

  5. Steam for 4 minutes

  6. Ready to serve
