Seasonal Vegetable Beef Balls

Ingredients:

bunch of watercress

tablespoon chopped spring onion

teaspoon dried orange peel shred

tablespoon Chinese parsley
Seasoning:

Method:

Mince
the lard and beef. Add seasoning (salt, sugar, pepper, baking
soda, alkaline water), orange peel shreds and spring onion. Mix
well and stir in one direction. Add water gradually and
meanwhile stir to a very sticky and elastic paste. Finally, add
cornstarch, salad oil, and sesame oil, and chopped Chinese
parsley. Put into refrigerator for 20 minutes.

Boil
half pot of water and add 1 teaspoon of salt. Dip the watercress
in the water to scald, drain and soak in cold water. Place at
the bottom of the steamer, shape beef paste to pellets and
arrange on the watercress to steam for 10 minutes.
