Chinese Crystal Pastries Recipe

Ingredients:

  • 10 oz minced pork

  • 1/2 cup cooked bamboo shoot

  • 1/2 teaspoon salt

  • 1/4 teaspoon pepper

  • Little of sesame oil

  • 1 tablespoon water

Wrapper:

  • 1 1/2 cup Tang flour

  • 1 tablespoon cornstarch

  • 1/2 tablespoon lard

  • 1 cup boiling water

Method:

  1. Mix pork and bamboo shoot with salt, pepper, sesame oil and water. Stir in one direction till it forms to a sticky paste. This is the filling

  2. Mix Tang flour and cornstarch in a bowl. Pour in boiling water ad stir.

  3. Add lard and knead into a dough, cover and leave for 5 minutes.

  4. Take out the doughand, knead into long rod cut into 24 pieces. Press each piece into a round wrapper, wrap in the filling, pinch and seal edges to make a round pastry

  5. Steam in steamer over high heat for 6 minutes

  6. Ready to serve
