Ingredients:

chicken claws

tablespoon fermented beans

tablespoon chopped garlic

tablespoon chopped spring onion
Seasoning:

tablespoon cooking wine

tablespoon sugar

tablespoons dark soy sauce

Small
amount of MSG (optional)

tablespoons water

teaspoon cornstarch

Method:

Cut
off the chicken claws, and chop into 1 inch long. Scald with
boiling water, drain and soak in 1 tablespoon of dark soy sauce
for 10 minutes

Heat
3 cups of oil, deep fry chicken claws until golden brown. Remove

tablespoons of oil to fry fermented beans, chili, and spring
onion until fragrant. Add the chicken claws and stir fry lates
followed by seasoning. Place on a plate and steam for 30
minutes. Serve.
