Chicken Claws With Fermented Bean Sauce Recipe

Ingredients:

  • 12 chicken claws

  • 1 tablespoon fermented beans

  • 1 tablespoon chopped garlic

  • 1/2 tablespoon chopped red chili

  • 1/2 tablespoon chopped spring onion

Seasoning:

  • 1 tablespoon cooking wine

  • 1 tablespoon sugar

  • 2 tablespoons dark soy sauce

  • Small amount of MSG  (optional)

  • 2 tablespoons water

  • 1 teaspoon cornstarch

Method:

  1. Cut off the chicken claws, and chop into 1 inch long. Scald with boiling water, drain and soak in 1 tablespoon of dark soy sauce for 10 minutes

  2. Heat 3 cups of oil, deep fry chicken claws until golden brown. Remove

  3. Use 2 tablespoons of oil to fry fermented beans, chili, and spring onion until fragrant. Add the chicken claws and stir fry lates followed by seasoning. Place on a plate and steam for 30 minutes. Serve.
