Sweet and Sour Chicken Liver Recipe

Ingredients:

  • 1 lb chicken livers

  • 1 tablespoon cooking wine or sherry

  • 1/3 teaspoon salt

  • 2 1/2 tablespoons ketchup

  • 1/2 tablespoon soy sauce

  • 1/2 tablespoon white vinegar

  • 3/4 tablespoon sugar

  • 5 tablespoons water

  • Oil for frying

  • 1 tablespoon sesame oil

Method:

  1. Wash and clean the chicken livers: drain the water and cut the livers into bite size pieces. Lightly score the livers lengthwise and crosswise. Add cooking wine, and salt; mix with chicken livers. Marinate for 5-10 minutes.

  2. Place ketchup, soy sauce, white vinegar, sugar and water in a bowl; mix thoroughly then set aside for later use

  3. Heat wok then add oil; deep fry the chicken livers for about 4 minutes, or until golden brown. Remove

  4. Heat wok then add 1 tablespoon sesame oil; add chicken livers and mixture from step 2. Turn heat to high and cook for 2-3 minutes; or until the liquid has almost evaporated; remove and serve
