Stir Fried Sweet and Sour Duck Gizzards Recipe

Ingredients:

  • 6 duck gizzards

  • 1 tablespoon cooking wine or sherry

  • 1 bell pepper, cut into bite size pieces

  • 2/3 cup pineapple, cut into bite size pieces

Ingredients A:

  • 1 green onion, cut into 6 pieces

  • 6 slices ginger root

  • 1 hot red pepper, cut into small pieces

Ingredients B:

  • 2 tablespoons sugar

  • 2 tablespoons water

  • 1 1/2 tablespoons ketchup

  • 1 1/2 tablespoons white vinegar

  • 2/3 teaspoon salt

  • 2/3 teaspoon sesame oil

  • 1 teaspoon cornstarch

Method:

  1. Cut each gizzard into quarters; remove any membrane. Score each piece lengthwise and crossswise. Mix with wine; marinade for 5-20 minutes. Put in a pot of boiling water; cook until color changes. Remove

  2. Add 1/2 teaspoon salt to pineapple; let stand for 20 minutes. Drain the water from the pineapple

  3. Heat wok then add 3 tablespoons oil. Stir fry Ingredients A until fragrant. Add pineapple; stir to mix

  4. Add Ingredients B; bring to boil. Add gizzards and bell peppers; stir to mix thoroughly. Place on serving plate; serve.
