Stir Fried Chicken with Dried Red Pepper Recipe

Ingredients:

  • 2/3 lb chicken meat

  • 1/2 tablespoon cooking wine or sherry

  • 1 tablespoon soy sauce

  • 1 tablespoon cornstarch

  • 1/2 cup oil for frying

  • 3 dried hot red peppers, diced

  • 1 green onion, cut into 10 pieces

  • 1/2 tablespoon cooking wine or sherry

  • 2 tablespoons soy sauce

  • 2 tablespoons water

  • 2 teaspoons sugar

  • 1 1/2 teaspoons cornstarch

  • 1 1/2 teaspoons white vinegar

  • 1/3 cup fried cashew nuts

Method:

  1. Use the blunt edge of a cleaver to lightly tenderize the chicken; cut the meat into 1 inch cubes.

  2. Add 1/2 tablespoon cooking wine, 1 tablespoon soy sauce, 1 tablespoon cornstarch, and mix thoroughly.

  3. Before frying, add 1 tablespoon oil and mix so that the cubed meat will separate easily during frying

  4. Heat the wok and add oil. Stir fry the chicken meat until cooked; remove. Remove the oil from the wok

  5. Reheat the wok then add 1 tablespoon oil. Use low heat to stir fry the diced hot red peppers until fragrant. Add chicken, onions, 1/2 tablespoon cooking wine, 2 tablespoons soy sauce, 2 tablespoons water, sugar, 1 1/2 teaspoons cornstarch and white vinegar. Turn heat to high and quickly stir fry. Add cashew nuts and mix
