Stir Fried Chicken with Dried Red

Ingredients:

lb chicken meat

tablespoon cooking wine or sherry

tablespoon soy sauce

tablespoon cornstarch

cup oil for frying

dried hot red peppers, diced

green onion, cut into 10 pieces

tablespoon cooking wine or sherry

tablespoons soy sauce

tablespoons water

teaspoons sugar

teaspoons cornstarch

teaspoons white vinegar

cup fried cashew nuts

Method:

Use
the blunt edge of a cleaver to lightly tenderize the chicken;
cut the meat into 1 inch cubes.

Add
1/2 tablespoon cooking wine, 1 tablespoon soy sauce, 1
tablespoon cornstarch, and mix thoroughly.

Before frying, add 1 tablespoon oil and mix so that the cubed
meat will separate easily during frying

Heat
the wok and add oil. Stir fry the chicken meat until cooked;
remove. Remove the oil from the wok

Reheat the wok then add 1 tablespoon oil. Use low heat to stir
fry the diced hot red peppers until fragrant. Add chicken,
onions, 1/2 tablespoon cooking wine, 2 tablespoons soy sauce, 2
tablespoons water, sugar, 1 1/2 teaspoons cornstarch and white
vinegar. Turn heat to high and quickly stir fry. Add cashew nuts
and mix
