Stir Fried Chicken in Tomato Sauce

Ingredients:

lbs chicken meat

tablespoon cooking wine or sherry

tablespoon soy sauce

tablespoon cornstarch

cup oil for frying

green onion, cut into 6 pieces

slices ginger root

cup black mushrooms, diced

1/4
cup celery, diced

1/2
cup bamboo shoots, diced

1/2
cup carrot, diced

Dash
of salt

tablespoons ketchup
-
1/2
tablespoon sugar

1/2
tablespoon soy sauce
-

tablespoons water
-
1/3
teaspoon salt

teaspoon cornstarch

Dash
of black pepper

Method:

Cut
the chicken into 1 inch cubes. Add cooking wine, 1 tablespoon
soy sauce, and 1 tablespoon cornstarch; mix thoroughly. Before
frying, add 1 tablespoon oil; mix so that the cubed meat will
separate easily during frying.

Mix
ketchup, 1/2 tablespoon sugar, 1/2 tablespoon soy sauce, water,
1/3 teaspoon salt and 1 teaspoon cornstarch in a bowl; set aside
for later use

Heat
the wok and add oil. Stir fry the cubed chicken until cooked;
remove (precooking).

Remove the oil from the wok; reheat the wok and add 2
tablespoons oil. Stir fry onion and ginger root until fragrant.

Add
black mushroom, celery, bamboo shoots and carrots and 2 tablespoons
water; stir fry until the liquid is reduced to almost dry and
vegetables are cooked.

Add
chicken and mixture from step 2. Turn the heat to high; stir to
mix quickly then remove and serve
