Steamed Chicken with Green Onions

Ingredients:

whole chicken (about 2 2/3 lbs)

tablespoon salt

tablespoon cooking wine or sherry

green onion, cut into 4 pieces

slices ginger root

1/2
cup shredded green onion

4
tablespoons shredded ginger root

Dash
of black pepper

1/2
tablespoon cornstarch dissolved in 1 tablespoon water

Method:

Wash
the chicken and pat it dry. Rub the exterior and the cavity of
the chicken with salt, cooking wine, cut green onion, and ginger
root slices. Leave the ingredients in the cavity of chicken, let
stand for 1 hour

Place
the chicken in a steamer, breast side up; steam over high heat
for 25 minutes.

Remove chicken, retain steaming liquid. Cut into bite size
pieces then put on a serving plate. Sprinkle the shredded green
onion, ginger root and black pepper on the chicken

Heat
4 tablespoons oil until smoking; drizzle over the chicken. Bring
1/2 cup of retained liquid to a boil; add cornstarch mixture to
thicken then pour it over the chicken
